This Persian burger recipe did not disappoint!

The typical burger components I always use are a juicy meat patty, a tangy sauce, a pickled element, greens, tomatoes, and something crunchy.

In this burger, I made a Persian Koobideh Kabob style burger patty with ground beef marinated in turmeric, onions, garlic, salt & pepper.  For the sauce, I created a fried mint aioli, because fried mint is a very distinct Persian flavor used in many Iranian dishes.

I grilled the tomatoes as an homage to the grilled tomatoes typically found at a Persian barbeque. And, I added crispy fried onions for the crunch element, something you’d find over Iranian dishes like Ashe Reshteh.

Instead of pickled cucumbers, I used pickled radishes, just like you’d find in Persian Sabzi (greens), served alongside a variety of dishes. And, last but not least, I held it all together in a toasted sesame bun.

The flavor combination on these Persian burgers is other-worldly. This is seriously a must try recipe!

Ingredients
Koobideh Patty:
  • 500 grams ground beef
  • 2 onions
  • 2 tablespoons turmeric
  • 1 garlic clove
  • 2 tablespoons olive oil
Fried Mint Aioli:
  • 1 cup mint leaves finely chopped
  • 2 tablespoons grapeseed oil
  • 1 tablespoon lemon juice
  • 1 teaspoon apple cider vinegar
  • 4 tablespoons mayonnaise
Crispy Fried Onions:
  • 1 cup canola oil (for deep frying crispy onions)
  • 2 onions thinly sliced
  • ½ cup of all-purpose flour
Burger Toppings:
  • 4 tomatoes
  • Romaine Lettuce
  • Pickled Radishes
  • Sesame Bun

Instructions
Koobideh Patties:
  1. Pulse the onions and garlic in a food processor until broken down completely.
  2. Add the onion/garlic mixture to a bowl with your ground beef, turmeric, olive oil, salt & pepper to taste.
  3. Let marinate for at least 30 minutes.
  4. Grill the koobideh patties for 2-3 minutes on each side using high heat on a grill pan.
Fried Mint Aioli:
  1. Add finely chopped mint leaves to a hot pan with grapeseed oil.
  2. Let fry for 1-2 minutes until mint is fragrant.
  3. Remove from pan and place in a small bowl with apple cider vinegar, lemon juice, mayonnaise, salt & pepper to taste.
  4. Stir ingredients until fully incorporated and set aside.
Crispy Fried Onions:
  1. Coat thinly sliced onions with flour.
  2. Place the canola oil in a saucepan on high heat until bubbling (check with the back of a wooden spoon for right temperature)
  3. Deep fry the onions in the oil for about 2 minutes until golden brown and crispy then set aside.
Burger Toppings/Assembly:
  1. Slice the tomatoes and grill them on high heat for 1-2 minutes each side.
  2. Toast your bun and begin to assemble your burgers.
  3. Place the aioli as the first layer, then the burger patty, the tomatoes, radishes, lettuce, crispy fried onions, and finally the top bun.
  4. Enjoy!
